Smart is a prefix attached to everything from kids to bombs but never skillets--until now. The Italian-made Focus Thermopoint sauté pan has a temperature-sensitive indicator dot on the handle that changes color from green to read as the skillet heats up on your stove. (Heat sensors in the bottom and on the sides of the pan track the temperature.) Red indicates the skillet is the right temperature (around 300 degrees) to start cooking. On the safety side, the color red also tells you that the pan is too hot to be placed under water for washing. The nonstick skillet is dishwasher safe and the silicone handle makes for comfortable hand-holding. Made by Ballarini, three pans--eight-, nine-, and 11-inch sizes—are available. Suggested retail price for the 11-inch skillet is about $40.
